In this post I teach you how to make my delicious Summer Salad with Shrimp. During the summer I love salads. It doesn’t require turning on the stove and it’s a quick and easy lunch or dinner. This salad is super refreshing plus you get all of your servings of veggies for the day at once!
Remember my food is made with love and I rarely take measurements. This salad doesn’t have to be precise and it still turns out tasty.
What you need:
- Lettuce chopped (I used romaine & red leaf but any can work here)
- Snow or sugar snap peas (either work)
- Green onions/scallions chopped
- Cucumber sliced
- Cooked shrimp (any size)
- Feta cheese
- Fresh dill (can sub dried)
Mix the lettuce with all the other chopped veggies. Add the cooked shrimp, top with feta and dill to taste to finish. This salad is delicious alone with a little bit of olive oil or you can add any dressing you like. Enjoy!
