A couple weeks ago I made this Simple Paella Recipe for the first time. My family was excited it turned out so good and even came back for seconds! Paella is a Spanish rice dish and it can have many different variations in the recipe. The Paella Recipe I share in this post is mixed with a combination of rice, veggies, seafood, and meat. Paella is traditionally made in a Paellera but you can cook it in any large, shallow pan.
Simple Paella Recipe

Ingredients
- Olive Oil for sauteing
- 1 large yellow onion diced
- 2 garlic cloves finely diced
- 1 yellow bell pepper chopped
- 1 orange bell pepper chopped
- 1 14.5oz can of diced tomatoes drained
- 1 tablespoon fresh thyme leaves
- Sprigs of saffron
- Salt & Pepper
- 4 boneless skinless chicken breast cut in cubes
- 1 lb of shrimp peeled and deveined
- 1 dozen mussels
- 2 cups of white rice
- 4 1/2 cups of chicken stock
Instructions
- First you are going to make a sofrito by sauteing the onions and peppers until translucent on medium high heat.
- Next add the garlic, fresh thyme, and diced tomatoes to the pan, stirring until the mixture begins to caramelize.
- Finally add the chicken stock, saffron, and rice.
- Stir to mix well and bring to a boil.
- While waiting for the rice to come to a boil, season the chicken breast with salt and pepper, then cook in a separate pan with a light coat of olive oil on medium high heat.
- Cook chicken breast until golden on both sides.
- Once the rice is boiling, add the cooked chicken breast and seafood.
- Turn down to a simmer and place a lid on the Paella.
- Cook until all of the liquid is absorbed, rice is tender, and seafood is done.
- Serve garnished with parsley and lemon wedges.
- Enjoy!
Notes
- If you can't find saffron, substitute with 1 teaspoon of turmeric.
- Fresh thyme can also be substituted for dried.
