In this post I give instructions for my Shrimp & Grits Recipe. I love shrimp & grits, it’s the epitome of comfort food. I normally eat it for brunch but it can be eaten for dinner as well. It takes a little time to prepare but well worth the wait.
You need:
Grits
1 cup of grits ( I use Quick Grits)
3 cups of water
Pinch of salt
1 tsp of butter
Shrimp
Olive oil
1 large onion diced
2 minced garlic cloves
2 bay leaves
2 sausage links diced (I used spicy chicken sausage)
1/4 cup of flour
2 cups of chicken stock
1lb med/large shrimp peeled & deveined
3 scallions sliced
Old Bay Seasoning to taste
Pinch of cayenne pepper
Ground black pepper to taste
First you’ll cook the grits. Bring three cups of water to a boil in a medium sized pot. Add the grits and salt, constantly stirring. I like to use a whisk to make them nice and smooth. Turn the grits down to a simmer and cook until desired thickness is achieved. Add the teaspoon of butter at the end. Remove from heat and set aside until ready to serve.
Place a large skillet over med/high heat and coat the bottom of the pan with olive oil. Make sure not to let the oil begin to smoke. I use a wooden spatula for this part of the cooking. First add the diced onions and cook for about two minutes until soft. Next add the sausage and cook until brown. Toss in the minced garlic and the bay leaves. Stir everything together well. Next we add the flour to the skillet to create a roux. Pour in the 2 cups of chicken stock constantly stirring to avoid lumps. When the gravy begins to bubble and thicken add the shrimp. Cook until pink, constantly stirring. Season with Old Bay, black & cayenne pepper to taste. Add sliced scallions before serving.
Place already prepared grits in a bowl and a ladleful of shrimp over it. Enjoy!
