This is a two for one post! So I love my local farmers markets and I look for deals on the seasonal fruits and veggies when I go weekly. This past week my find was a big colorful bag of peppers for $3.99! My first thought was stuffed peppers. Stuffed peppers are easy to make and healthy. The same day at the market I bought steak as well, so I made kebabs the following day with the leftover peppers. Recipes below!
Disclaimer: I rarely ever measure spices and herbs as I cook because my food is from the heart. I smell and taste as I go.
Stuffed peppers –
6 large bell peppers
1 1/2 cups of rice
1 lb Ground turkey
1 can of tomato sauce
1/2 cup of water
2 garlic cloves
1 small diced onion
Fresh parsley (can sub dried)
Fresh basil ( can sub dried)
Chopped mushrooms
Salt & pepper to taste
Olive oil for sautéing
Preheat the oven to 350F. Rinse the bell peppers and chop off the tops, cleaning the seeds out the inside. Some people keep the tops and cook them for decorative purposes. That’s purely optional. Oil the bottom of a baking dish, you can use butter, olive oil, cooking spray, etc. Place the peppers in the dish and bake for 15 minutes.
Meanwhile cook the filling. Cook your rice according to the package instructions, any rice of your choice will work. Heat the olive oil in a large pan and sauté onions and mushrooms until translucent and soft, add the diced garlic. Set aside and cook the ground turkey seasoning with salt and pepper. When it’s done add the onion mixture back to the pan. Next add the can of tomato sauce and 1/2 cup of water. Now it’s time to add the herbs. Add diced parsley and basil to the mixture. Check the flavor and adjust spices accordingly. Add your cup of cooked rice to the sauce and meat mixture.
Now it’s time to add the mixture to the peppers. Spoon the mixture into the peppers filling up to the top. At this point some people add Parmesan cheese or mozzarella. I liked mine just fine without cheese. I added extra parsley on top of each for aesthetic purposes. Bake a further 25-30 minutes checking for tenderness on the peppers. This recipe can be altered and still turn out excellent.
Beef kebabs
Since its summer time kebabs are a wonderful quick dish. You can use pretty much any meat or fish, or simply all veggies.
Ingredients:
2 ribeye steaks diced into cubes
Bell peppers diced
Whole mushrooms
Cilantro
Salt & Pepper
Granulated Garlic
Soy sauce or any marinade you like
* If using wooden sticks you have to soak them first so they won’t catch fire on the grill or in the broiler.
Put the meat and veggies on the skewers alternating veggies and meat. Once the skewers are made season everything at once with the marinade, salt & pepper, and granulated garlic. You can also marinate the meat first before cooking, but I made this meal quickly.
Grill or broil until meat is cooked and veggies are tender. The kebabs can be served over a bed of any rice of your choice.
