In this post I give the recipe to my Old Fashioned Banana Pudding. It’s been made the same way in my family since I was a girl and everyone absolutely loves it.
Recipe as follows:
- One large bunch of bananas sliced
- One box of Vanilla Wafers
- Two cups of milk
- 3 eggs separated (reserve whites for meringue)
- 3/4 cup of sugar (1/2 for custard remaining for meringue)
- 1/3 cup of all purpose flour
- Dash of salt
- 1/2 teaspoon vanilla extract.
Preheat oven to 350F.
For this recipe you need a double boiler. Don’t have one? No problem! Place a quart of water in a large pot to boil, add a smaller pot on top of the water to create your own double boiler.
In the small pot place 1/2 cup sugar, flour and dash of salt and mix. Next blend in egg yolks and milk. Cook over the boiling water, stirring constantly with a whisk for about 10 minutes until thickened. Remove from heat and stir in the vanilla.
I use a 9×9 glass Pyrex baking dish. Spread a little of the custard on the bottom then cover with a layer of cookies, followed by a layer of bananas. Pour a portion of the custard over the bananas and follow the same cookie/banana pattern. Make a total of three layers ending with custard on top.
To make the meringue beat the egg whites with a mixer, gradually adding the remaining sugar until soft peaks form. Spoon on top of the pudding evenly. Add any remaining cookies around the edge of the pudding for garnish.
Bake at 350F for about 15 minutes until the meringue is brown. Cool before serving. Enjoy!
