In this post I share the recipe to make a Low Country Boil. The Low Country Boil originates from the coasts of Georgia and South Carolina where they would be cooked for large gatherings. This is a one pot meal and it doesn’t take long to make.
Recipe as follows:
2-3lbs of unpeeled shrimp
Crab legs (optional)
4 Smoked Sausage links sliced
1 Vidalia Onion large diced
8 Small Red Potatoes
6 Ears of Corn on the cob
Old Bay Seasoning to taste
Parsley for garnish
Melted butter and cocktail sauce to serve
Bring about a gallon of water to boil in a Dutch oven or large pot. Once the water is boiling add the Old Bay Seasoning. Typically there are instructions on the back as to how much vs how many quarts of water. I add it and smell/taste to see if its how much I like.
First you add the potatoes to the boiling water. Once they begin to soften you add the corn, onions, and smoked sausage. Lastly, you wait until the very end to add the shrimp and crab because they both cook in a matter of minutes. You don’t want to over cook the seafood.
Once the shrimp are pink and crab is bright red, strain the pot. Traditionally a low country boil is eaten on top of newspaper. You can serve it how you like. Sprinkle parsley at the end for garnish and extra Cajun spice for flavor. Serve with melted butter and cocktail sauce.
