In this post I share my Lobster Mac and Cheese Recipe. During my weekly shopping trip I came across lobster tails for $3.99 each! I couldn’t pass that deal up. I knew the perfect thing to make….. Lobster Mac and Cheese!
Here’s what you need:
1lb of elbow macaroni
1 lb of lobster meat
1 quart of half & half
1 stick of unsalted butter (reserving one tablespoon)
1/2 cup all purpose flour
4 cups Swiss & Gruyere cheese grated
2 cups Sharp cheddar grated
1 tablespoon of Salt
1/2 teaspoon of Pepper
1/2 teaspoon of Nutmeg
1 cup of bread crumbs
Fresh parsley for garnish
Preheat the oven to 375F
First place about 8 cups of water in a medium/large pot and bring to a boil. While waiting on the water for the macaroni to boil, steam your lobster and roughly chop it into bite sized bits and set aside. Cook your macaroni al dente, strain, and set aside for the roux.
Next you’re going to make the roux which is the best part! In a small saucepan warm the quart of half and half, but be careful not to let it boil. In a large pot over low heat melt the stick of butter except the tablespoon you’ve already set aside. Next add the flour and stir constantly with a whisk. Then add the hot half and half while still whisking. Cook until the roux is thickened. Remove mixture from the heat and add all the cheeses, salt, pepper, and nutmeg. Lastly add the macaroni and lobster mixing well.
You can place the mixture in individual serving dishes or in one large baking dish.
In a pan melt the last tablespoon of butter and add the cup of breadcrumbs, thoroughly mixing together. Take the mixture and sprinkle it on top of the macaroni already in the dish.
Bake for 30 minutes until bubbly and the top is browned. Garnish with fresh parsley before serving.

December 10, 2013 at 1:12 pmDo you have a cheese sub for swiss? My kids and I dont like it at all. Also, what about real crab and not lobster? It sounds good. I think my kids will like this.

December 10, 2013 at 1:15 pmJayla, I would sub mozzarella for swiss or you can leave it out all together. It just gives the recipe a little kick. Hmmm…crab mac n cheese may work too. Just have to make sure not to overcook the crab in the oven as it may get rubbery. My kids loved this recipe! Let me know how it turns out after you make it 🙂
