In the summer I love fresh, light foods to eat. Salsas are so good, and good for you, mostly filled with healthy fruits and veggies. These 12 Summer Fresh Summer Salsa Recipes are a few of my favorites. Fresh salsa goes well with a variation of different foods. You can go the traditional route and eat it with chips, or for breakfast over eggs, or for dinner over meat and seafood. The night I created this salsa my family ate it over jerk fish. The sweetness in the Pineapple Salsa complimented the spicy fish and it was a perfect combination.
Easy Pineapple Salsa Recipe
- 2 cups of fresh diced pineapple
- 1/2 red onion finely diced
- 1 palm-ful of fresh chopped cilantro
- 2 minced garlic cloves
- 1 jalapeno pepper seeded and chopped
- Juice from 1/2 lime
- Salt to taste
- Add all fresh ingredients to a mixing bowl to combine.
- Squeeze lime juice over, check for flavor, add more if necessary.
- Lastly sprinkle on salt to taste.
- Enjoy!
