Chicken Noodle Soup made Simple
Almost two weeks ago everyone in my family came down with some nasty virus. If Mommy gets sick, it’s hard for me to take care of everyone else. Since I wasn’t feeling 100% I came up with this Chicken Noodle Soup made Simple Recipe.
I try to cure my family with natural home remedies before we reach for any OTC medications. Chicken noodle soup has been proven by research to clear up congestion, aid in hydration, and it has anti-inflammatory properties. When you add vegetables such as carrots, parsley, onions, and celery you are also making sure your body is getting valuable antioxidants that will aid in a faster recovery.
Even if you don’t feel better immediately, Chicken Noodle Soup is the ultimate comfort food!
- 8 Cups of already prepared Chicken Broth
- 2 cups of cooked and diced Chicken Breast
- 6 oz of extra broad egg noodles
- 1 large onion diced
- 3 fresh garlic cloves minced
- 4 celery sprigs chopped
- 4 large carrots peeled and sliced
- 1 tablespoon of fresh thyme
- 1 tablespoon of fresh chopped parsley
- Salt & Pepper to taste
- Bring your chicken stock to a boil in a large pot or dutch oven.
- Add onions, garlic, celery, carrots, and herbs.
- Turn down heat to medium.
- When veggies are halfway done, add egg noodles.
- Once noodles and veggies are tender add cooked chicken.
- Stir until well mixed.
- Season to your liking with salt & pepper.
- Serve with fresh chopped parsley on top.
- Enjoy!
- Fresh thyme and garlic can be substituted with dried.
