In this post I share my Buffalo Chicken Salad Recipe. A couple of days ago during my weekly shopping trip I was thinking about making spicy buffalo wings. But then I thought spicy buffalo chicken would taste great in salad form. That’s how my Buffalo Chicken Salad Recipe came into existence. It’s great for lunch or dinner and extremely filling. My kids loved it too and asked for seconds.
Here’s what you need:
1 head of romaine lettuce chopped
3 celery stalks diced
1 cup of shredded carrots
1/2 red onion finely sliced
1 bunch of scallions chopped
1 cup of fresh blue cheese crumbled
1lb of boneless/skinless chicken breast
1 cup of buffalo sauce
1 cup of flour
Oil for frying
For the dressing I use my Homemade Ranch Dressing .
First you are going to prepare the chicken. You can purchase already sliced chicken tenders but I normally buy whole boneless skinless chicken breast. If you have whole chicken breast, slice them into strips. Dredge the chicken through the flour to cover thoroughly. Fry chicken until golden brown on medium high heat. Drain chicken thoroughly on paper towels. Next dip each chicken strip in the buffalo sauce and set aside.
Now it’s time to prepare the salad. On a plate or serving dish first arrange the lettuce. Next sprinkle on the celery, carrots, and onions. Layer two chicken strips on top. Drizzle with my Homemade Ranch Dressing, sprinkle with crumbled blue cheese and chopped scallions.
