In this post I give instructions for my simple stir fry recipe. This is a 30 minute meal!
Rice
2 cups jasmine rice
3 cups of water
Veggies & Meat
9oz or 3 cups of snow peas
8oz of mushrooms sliced
1lb boneless skinless chicken breast cubed
1 egg beated
1/4 cup of corn starch to coat chicken
Oil for frying & sautéing
Sauce
1/2cup premade teriyaki sauce
1/4 cup water
2 tablespoons of cornstarch
First prepare the rice. Combine two cups of jasmine rice with three cups of water and bring to a boil. Once boiling, stir and cover with a lid turning the heat to low to continue cooking until soft and water has evaporated. Remove from heat and set aside when done.
Then take the cubed chicken breast and coat with the beaten egg. Next dip and lightly cover with corn starch. Fry on med/high heat until golden brown on each side, about 5 minutes. Drain and set chicken aside.
Next sauté the snow peas and sliced mushrooms over medium heat making sure not to overcook the veggies. Mix the 1/2 cup of teriyaki sauce, 1/4 cup of water and two tablespoons of corn starch. Pour the mixture into the pan with the veggies. Stir rapidly to thicken the sauce. Lastly, remove from heat and place chicken in the pan with the veggies and the sauce. Mix together to coat thoroughly. Serve over jasmine rice.
