In this post I share my shrimp tacos recipe. This recipe is excellent for lunch or a light dinner. It’s simple, delicious and easy to make.
You need:
- Corn or flour tortilla shells
- 1lb of medium size shrimp
- 1 avocado pitted and sliced
- 1/2 red onion thin sliced
- 1 bunch of scallions chopped
- 1 bunch of cilantro chopped
- Queso fresco cheese for crumbling
- Salt & pepper to taste
- 1 teaspoon of cumin
- Olive oil for cooking shrimp
First season the shrimp with the cumin, salt and pepper. Cook with a little bit of olive oil until pink. Set aside to cool. Next soften your tortilla shells by heating them in a pan individually over med/high heat. Turn each shell after about five seconds on each side. Set aside. Now it’s time to assemble the tacos. Place about 5-6 shrimp on each shell. Next add the veggies as liberal as you like and finish off by toppings with the Queso Fresco. These tacos would also taste great with my Easy Guacamole Recipe. Serve with your favorite salsa or sauce and enjoy!
