In this post I share the recipe to make my mixed fruit cobbler. I buy berries weekly as a staple. We eat them with breakfast, in smoothies, for snacks and desserts. I had some strawberries and blackberries leftover, what better to use them for? Cobbler!
Recipe as follows:
Preheat the oven to 350F
Crust
- 2 cups of all purpose flour
- 3/4 cup of cold butter
- 3-4 tblspns of cold water
Place the flour in a large mixing bowl. Cut in the butter mixing until it resembles coarse crumbles. Next add the ice water tblspn at a time. Roll into two balls and refrigerate until ready to use.
Filling
- 6 small peaches peeled and sliced
- 6 strawberries sliced
- 12 blackberries
- 3 cups of water
- 2 tblspns of corn starch mixed in 1/2 cup of cold water
- 1 cup of sugar
- 2 pinches of cinnamon
Place the sliced peaches in a saucepan with 3 cups of water and 1 cup of sugar. Bring to a boil, then reduce to simmer. When the texture is soft (not mushy) pour in the cornstarch mixture. Stir to thicken. Remove from heat and add the two pinches of cinnamon. Stir then add the sliced strawberries and blackberries. It’s no need to pre-cook those.
Take the first ball of crust and roll it out flat. Using a 9×9 baking dish, butter the bottom so the crust won’t stick. Next press the crust in the bottom, then pour in the fruit filling. Roll out the top crust and place it over the fruit. You can lay it in pieces over the fruit, it doesn’t have to be perfect. Bake for 30 minutes until brown and bubbly. Serve warm with whipped cream.
