Who doesn’t love brussel sprouts?! Well after you cook them this way you will! This recipe is super simple and sure to please.
1lb of Brussels sprouts sliced
1/2lb of mushrooms sliced
2 fresh garlic cloves diced
1/2 small red onion diced
Olive oil for drizzling
Salt & Pepper to taste
Preheat oven to 400F. Clean and slice all veggies, cutting off ends of Brussels sprouts and discarding any yellow leaves. Mix all ingredients in a bowl and pour on sheet pan or baking dish for roasting. Cook for 35-40 minutes until tender.
